    • 1 lb sliced bacon, diced

    • 1 medium sweet onion, chopped

  • Casserole Base:

    • 6 large eggs, lightly beaten

    • 4 cups frozen shredded hash brown potatoes, thawed

    • 2 cups shredded cheddar cheese

    • 1.5 cups 4% cottage cheese

    • 1.25 cups shredded Swiss cheese


Instructions

  1. Cook Bacon & Onion:

    • Preheat oven to 350°F (175°C).

    • In a skillet, cook bacon and onion over medium heat until the bacon is crisp (about 8–10 minutes).

    • Drain the bacon mixture well on paper towels.

  2. Assemble Casserole:

    • In a large bowl, combine eggs, hash browns, cheddar cheese, cottage cheese, and Swiss cheese.

    • Add the bacon and onion mixture, stirring well to combine.

    • Transfer the mixture to a greased 13×9-inch baking dish and spread evenly.

  3. Bake:

    • Bake uncovered for 35–40 minutes or until a knife inserted in the center comes out clean.

    • Let stand for 10 minutes before cutting and serving.
