Crust:

  • 1½ cups graham cracker crumbs

Filling:

  • 3 large eggs

  • 1 tsp vanilla extract

  • ½ cup white chocolate chips, melted

Raspberry Swirl:

  • ½ cup raspberry preserves


Instructions

  • Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.

  • Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and slightly up the sides. Chill while making the filling.

  • Make the filling: Beat cream cheese until smooth. Add sugar, sour cream, eggs, and vanilla. Blend until combined, then gently stir in the melted white chocolate.

  • Assemble: Pour filling over the crust. Drop spoonfuls of raspberry preserves on top and swirl gently with a knife or skewer.

  • Bake for 50–60 minutes, until the edges are set and the center is slightly jiggly.

  • Cool: Turn off the oven, leave the door ajar, and let cheesecake cool inside for 1 hour. Then transfer to room temperature to cool completely.

  • Chill: Refrigerate for at least 4 hours or overnight for best texture.

  • Serve: Slice and enjoy chilled. Garnish with fresh raspberries or white chocolate curls if desired.

  • For a crispier crust, pre-bake for 8 minutes at 325°F before adding the filling.
