Description

Traditional Colcannon (Irish Mashed Potatoes) is the perfect comfort food! This hearty dish combines creamy mashed potatoes with pan-fried cabbage, onions, and crispy bacon for a rich, savory delight. Whether served as a cozy side or a satisfying main, this classic Irish recipe is pure, buttery goodness in every bite.


Ingredients

  • 3 large russet potatoes, peeled and cut into chunks

  • 3 large Yukon Gold potatoes, peeled and cut into chunks

  • 7 tbsp unsalted butter, divided

  • ½ cup heavy cream or whole milk

  • 1 medium onion, chopped

  • ½ head green cabbage, chopped

  • 6 slices crispy cooked beef bacon, coarsely chopped (or turkey bacon for halal version)

  • Kosher salt and freshly ground black pepper, to taste


Instructions

  • Cook the Potatoes:

    • Place the potatoes in a large pot of salted water.

    • Bring to a boil and cook until fork-tender (about 15–20 minutes).

    • Drain well and return to the pot.

  • Add Butter and Cream:

    • Add 4 tbsp butter and the cream or milk to the potatoes.

    • Cover with the pot lid and let the butter melt for a few minutes.

  • Cook Cabbage and Onions:

    • In a large skillet, melt 2 tbsp butter over medium heat.

    • Add onions and cook until soft and translucent (about 5 minutes).

    • Add chopped cabbage and cook until tender and slightly browned, about 7–8 minutes.

  • Mash and Combine:

    • Mash the potatoes until smooth and creamy.

    • Gently fold in the cabbage mixture and half of the bacon.

  • Season and Serve:

    • Season generously with salt and pepper.

    • Top with the remaining bacon and add small pats of the remaining butter on top.

    • Serve hot and enjoy!

Notes

  • For extra flavor, add chopped leeks, green onions, or chives.

  • Use bacon fat instead of butter to fry the cabbage and onions if desired.

  • Serve with a drizzle of melted butter for an even creamier experience.
