These Pepperoni Pizza Quesadillas combine the cheesy, savory goodness of pizza with the crispy, golden perfection of quesadillas! With melty cheese, crisped pepperoni, and a touch of Italian seasoning, it’s a guaranteed hit for kids and adults alike. Perfect for busy weeknights, game-day snacks, or when you’re just craving pizza without the fuss.

Ingredients

  • 1 large flour tortilla (soft and foldable for easy cooking)

  • 1/3 cup shredded cheese (cheddar, mozzarella, or Mexican blend)

  • 6-8 pepperoni slices (or turkey pepperoni for a lighter option)

  • 1/2 tsp Italian seasoning (for that classic pizza flavor)

  • 1/4 tsp garlic powder (adds a hint of savory goodness)

  • Pizza sauce or marinara (for dipping)

  • Butter (for the pan, about 1/2 tbsp)

Instructions

  1. Crisp the Pepperoni:

    • Heat a skillet over medium heat.

    • Add pepperoni slices and cook until crisp (about 1-2 minutes).

    • Remove from skillet and place on paper towels to drain excess grease.

  2. Prep the Pan:

    • Wipe the skillet clean and add 1/2 tbsp butter.

    • Let the butter melt and coat the bottom of the pan evenly.

  3. Crisp the Tortilla:

    • Place the tortilla in the skillet, flipping it a couple of times to coat both sides with melted butter.

    • Allow ONE SIDE to crisp for about 1 minute.

  4. Add Toppings:

    • Flip the tortilla so the crisped side is now facing up.

    • Sprinkle shredded cheese, place crisped pepperoni slices, and add Italian seasoning and garlic powder over the cheese.

  5. Cook:

    • Let the tortilla cook for another 2-3 minutes until the bottom is golden brown and the cheese is fully melted.

  6. Fold & Slice:

    • Fold the tortilla in half, press gently, and remove from the skillet.

    • Let it cool slightly, then slice into triangles using a pizza cutter.

  7. Serve:

    • Enjoy with warm pizza sauce or marinara for dipping. Delicious and oh-so-easy!

Notes

  • More Toppings: Add olives, mushrooms, onions, jalapeños, or bell peppers for extra flavor.

  • Add Parmesan: Sprinkle some grated parmesan cheese before folding for extra cheesy goodness.

  • Lighter Option: Use whole-wheat tortillas and turkey pepperoni if you prefer.

  • Make it Spicy: Add a pinch of red pepper flakes for a bit of heat.
