Description

This Quick & Easy Shepherd’s Pie Recipe is a lifesaver for busy weeknights! Made with just 6 basic ingredients, it’s the ultimate comfort food. With flavorful ground beef, creamy mashed potatoes, and melted cheddar cheese, it’s a family favorite you’ll make again and again. Perfect for weeknight dinners or cozy gatherings!

Ingredients

  • 1 pound ground beef (or ground turkey for a lighter option)

  • 1 packet beef stew seasoning mix (for rich, savory flavor)

  • 1 (12oz) bag frozen mixed veggies (peas, carrots, corn, and green beans)

  • 1 can tomato soup (adds a rich, tangy base)

  • 1+ cups shredded cheddar cheese (or your favorite cheese blend)

  • 1/2 cup water (to thin the mixture slightly)

  • Mashed potatoes (boxed, homemade, leftover, or store-bought)

Instructions

  • Preheat your oven to 400°F (200°C).

  • Brown the ground beef in a large skillet over medium-high heat, breaking it apart as it cooks. Drain any excess grease.

  • Add tomato soup, frozen mixed veggies, beef stew seasoning mix, and water to the cooked beef. Stir well and let it simmer for 5-10 minutes until the mixture thickens slightly.

  • Transfer the beef mixture into a greased 9×13-inch baking dish, spreading it out evenly.

  • Layer mashed potatoes over the beef mixture, spreading them evenly to cover the entire surface.

  • Sprinkle shredded cheddar cheese over the mashed potatoes.

  • Bake for 30 minutes or until the cheese is melted and slightly golden.

  • Let it cool for about 5 minutes before serving. Enjoy your cozy, comforting Shepherd’s Pie!

Notes

  • Make it healthier: Swap ground beef with ground turkey or chicken.

  • Add more flavor: Sauté onions and garlic with the ground beef for extra depth.

  • Use fresh veggies: If you prefer, replace frozen veggies with fresh ones (diced carrots, peas, corn, etc.).

  • Cheese options: Try mozzarella, gouda, or even pepper jack for a different twist!
