For the Sauce:

  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 2 cups fresh spinach, roughly chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Garnishes:

  • Extra Parmesan cheese
  • Fresh basil or parsley, chopped

Instructions

  • Cook spaghetti in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  • Sauté garlic in olive oil for 30 seconds, then add red pepper flakes.
  • Add sun-dried tomatoes and spinach, stirring until the spinach wilts.
  • Pour in heavy cream, then add Parmesan cheese, Italian seasoning, salt, and black pepper. Simmer until slightly thickened.
  • Toss cooked pasta into the sauce, adding reserved pasta water if needed for a silky consistency.
  • Garnish with extra Parmesan and fresh basil, then serve immediately.
