Ingredients

Scale

For the Brownies:

  • 1 box strawberry cake mix
  • ½ cup salted butter, melted
  • 2 large eggs
  • 2 tablespoons strawberry gelatin

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ¼ cup salted butter, softened
  • 1 tsp vanilla extract
  • ½ cup powdered sugar
  • 12 tbsp heavy cream (adjust for desired consistency)

For the Strawberry Shortcake Crumble:

  • 20 Golden Oreos (about ½ standard package)
  • 4 tbsp strawberry gelatin
  • 4 tbsp salted butter, melted

Instructions

  • Preheat & Prepare:

    • Preheat oven to 350°F (175°C).
    • Line an 8×8-inch glass baking dish with parchment paper and spray with non-stick spray.
  • Make Brownie Base:

    • In a large bowl, mix together strawberry cake mix, melted butter, eggs, and strawberry gelatin until well combined. The batter will be thick—don’t worry, that’s perfect!
    • Spread the batter evenly into the prepared baking dish.
  • Bake:

    • Bake for about 25 minutes, until the brownies are set and slightly firm to the touch.
    • Allow the brownies to cool completely before frosting.
  • Prepare Frosting:

    • In a medium bowl, beat together cream cheese, butter, and vanilla extract until smooth and creamy.
    • Add in the powdered sugar and beat until well-combined.
    • Add heavy cream as needed to reach a smooth, fluffy consistency.
  • Spread Frosting:

    • Spread the cream cheese frosting over the cooled brownies, making sure it’s evenly distributed.
  • Make Crumble:

    • In a food processor, pulse Golden Oreos until coarsely crushed.
    • Add strawberry gelatin and melted butter, then pulse until the mixture resembles coarse crumbs.
  • Top Brownies:

    • Sprinkle the strawberry shortcake crumble evenly over the frosted brownies, pressing down gently so it sticks.
  • Serve & Enjoy:

    • Cut into squares and serve. These beauties are as delicious as they are gorgeous!

Notes

  • For best results, refrigerate the brownies for about 30 minutes before cutting to allow the frosting to firm up.
  • Store brownies in an airtight container at room temperature for 3–4 days, or in the fridge for up to 5 days.
  • To freeze, wrap individual brownie squares in plastic wrap and place them in a freezer-safe bag. They’ll stay fresh for up to 3 months.
