Description

These delightful strawberry tea sandwiches are light, fruity, and irresistibly cute—perfect for springtime brunches, bridal showers, or Mother’s Day tea. Made with fresh white bread, strawberry cream cheese, and juicy strawberry slices, they come together in minutes and add a sweet, refreshing touch to any gathering. Bonus: they’re just as fun to make as they are to eat!

Ingredients

  • 6 slices fresh white bread (or your favorite soft sandwich bread)

  • 12–14 oz strawberry cream cheese, softened

  • 6–8 fresh strawberries, thinly sliced

Instructions

  • Spread: Evenly spread a generous layer of strawberry cream cheese onto one side of each bread slice.

  • Shape: Use a cookie cutter (heart or round) or trim off crusts and cut into small triangles or squares.

  • Top: Layer strawberry slices over the cream cheese.

  • Assemble: For open-faced, serve as-is. For closed sandwiches, top with another slice of cream-cheesed bread and slice again for finger-friendly bites.

  • Chill (Optional): Wrap sandwiches in parchment paper and refrigerate for up to 1 day before serving.

Notes

    • Make-ahead Tip: These can be assembled and chilled up to 24 hours in advance—just keep them wrapped to prevent drying out.

    • Variations: Swap strawberry cream cheese with mascarpone mixed with a touch of honey for a fancier version.

    • Kid-friendly: Use fun shapes like stars or animals with cookie cutters to make lunchtime extra fun.
